1 box of yellow cake mix
1 14 oz can of pumpkin
1/2 bag of cinnamon chips (like chocolate chips)
mix the dry cake mix, pumpkin, and chips together. the batter will be kind of thick, but they come out, oh so, moist! plop them into a greased muffin pan or paper muffin cups, and bake at 325* for 20-25 minutes. we dusted powdered sugar on them, but we also thought about dipping them in melted butter and then a cinnamon/sugar mixture. they are wonderful right out of the oven or heated up. lane eats them room temperature, but i like muffins warm.
walmart doesn't carry the cinnamon chips. i found hershey's brand at homeland, but haven't looked at any other stores. of course, i bought several bags so when the craving hits, i wouldn't have to search the town over!

i've also found that this recipe works best with mini muffins, as the batter is so heavy the full sized cupcakes tend to cave in. but still yummy!

Reasor's doesn't carry cinnamon chips either. I went this evening with the intention of making them as soon as I got home. I might try them without the cinnamon chips.
