tasty tuesday...


i'm sure this isn't an original idea, but out of blogger's block and a lot of recent yummy recipes, i will share a recipe that i have attempted and that has passed someone other than myself's approval! i always need new ideas when it comes to meals. one of my least favorite weekly traditions is coming up with menus. i feel like we get in a rut of the same 'ol, same 'ol. btw, i am by no means a great cook. i don't cook gourmet meals. i consider myself a down-home cook...lots of butter and sugar in everything. who knows how this will work, but if we can somehow come with an idea to share recipes that'd be rad...but for now i'm going to share one i came across this week in a cookbook my mimi gave me a couple of years ago. sidenote: my favorite cookbooks are the kind compiled by a bunch of people :)

Lazy Lasagna
i've never attempted real lasagna because the amount of ingredients and different dishes it would require don't seem worth it. however, i've been craving it lately so while pouring over my cookbooks looking for inspiration, i came across this...easiest thing i've ever made!

2# ground turkey or beef
1/2 onion, chopped
1 pkg lasagna noodles
32 oz your fav spaghetti sauce
2-3 cups shredded mozarella cheese
1 1/4 cup water

brown ground meat and chopped onion, drain. begin to layer the lasagna with a light sprinkle of meat on the bottom of a 9X13 baking dish. next, put a layer of uncooked lasagna noodles down then more meat. pour 2 cups of spaghetti sauce over meat and sprinkle with 1/3 of cheese. place another layer of noodles on top of cheese. another 1/3 of cheese. top cheese with remaining meat and sauce. end layering with last 1/3 of cheese. pour the water over all. cover with foil and cook for 1 hour @ 350* or until most liquid is absorbed.

*i added a bit of garlic salt and brown sugar to each meat layer!!

That looks yummy! If I'm coming home this weekend, I expect so many home cooked meals that I will be ready to eat out again. Ya hear?

Kelli, you posted a pumpkin muffin recipe a couple years ago and it is my favorite fall treat. I've been sharing it with everyone I know and they are loving it!

I kind of do the same thing with frozen ravioli. I take a can or two of spaghetti sauce, package of frozen ravioli, and a pack of mozzarella cheese. Pour some of the sauce on the bottom of a baking dish. Place a single layer or ravioli on top of this. Cover with more sauce. Place remaining ravioli upside down on top of the bottom layer. This way they fit in the gaps between the corners of the bottom layer. Cover with more sauce. Place the shredded cheese on top and bake at 350 til sauce is bubbling and cheese is melted.
